Slow Cooker Low Fat Wonders. Beef Goulash

As you may know, I’ve been trying to lose weight for quite a while now. I bought a slow cooker.

The first meal I tried was Beef Goulash and it’s really good. Beef was tender, sauce was tasty and it’s just 288 calories per good sized portion. Try it yourself and let me know how you get on.

Beef Goulash

Yield Serves 4

Versatile and easy to make.

Ingredients

  • 900g lean stewing beef - cut into chunks
  • 1 red bell pepper sliced
  • 3 garlic cloves crushed
  • 250ml beef stock or broth
  • 250ml red wine
  • 400g tin chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tsp paprika
  • 1 1/2 tbsp plain flour
  • 1 onion chopped
  • low cal cooking oil
  • salt & pepper to taste

Instructions

Season the Beef and quickly brown in a smoking hot pan with a little of the low cal spray.

Once browned remove from pan and dust with flour by putting in a bag with the flour and giving a good shake.

Add all ingredients to the slow cooker and mix well, leave to cook on low with the lid shut for 5-6 hrs or until the beef is tender and cooked through, If you do want the sauce a bit thicker then leave to cook for a further 45 mins with the lid off.

  1. I am counting calories and have given up meat and now use Quorn – I have never tried Quorn in a slow cooker! does it work for quorn too do you know?

  4. Just because the warmer weather is here now doesn’t mean that I’ll be putting my slow cooker away! I use it all year round and goulash is one of my faves, especially when heavy on the paprika. I tend us use shin of beef though as it is more tender 🙂

  14. I love a good goulash, but have never tried it in a slow cooker. I normally use beef shin which is economical, but have also used brisket and it worked a treat.

  15. Sounds very nice – my friend does a lot of slimming world recipes in hers, particularly chili and spag bol. I have tried them and they taste just as good if not better than full fat versions! x

    1. Please do let me know what you think if you try it, also just to add it don’t have to be a red pepper can be any colour as you can see I was all out of red so used green and yellow lol xx
