Macaroni Cheese & Chocolate Almond Hazelnut Dessert – Tofutastic!

Puddings with Tofu

I was recently sent two packets of Silken Tofu to play with and to see what I could come up with and being interested in substitutes for higher fat food, this was a perfect opportunity to experiment. Silken Tofu is low fat, high-protein, dairy and gluten-free so ideal to use as a protein-rich alternative whether you are vegan, vegetarian or just looking after your health. I didn’t want to do the usual things with form tofu like using in curries and soups. I wanted to use it as a substitute for a dessert, or as an alternative to cream so here’s what I came up with!

Macaroni Cheese


  • 12oz dry macaroni
  • 1 pack Mori-Nu Silken Tofu (349g, firm)
  • 2 tablespoons butter (we used Benecol Buttery)
  • 340g of strong cheese
  • 1 tsp english mustard


Cook the macaroni as directed. Blend tofu, butter, cheese, mustard, salt and pepper in a blender.  

Drain macaroni, and while it’s still steaming hot, mix together with the cheese/tofu mix. 

Pop under the grill to brown off the top.  Serve.

Now for dessert:  I love nutty chocolate spread and creamy puddings, so I decided instead of using my Quark as a base, I would substitute that for a pack of Silken Tofu. It’s plain and carries the flavour really well. Silken Tofu is also amazing blended and used as a base, so I thought I’d give it a go and make:

Chocolate Almond Hazelnut Dessert

Yield Serves 4


  • 1 pack Mori-Nu Silken Tofu (349g, firm)
  • 1 bar of Tesco every day value milk chocolate
  • 2 tbsp almond butter (1 if you don’t like it as thick)
  • 2 tbsp Choc Shot
  • 2 tbsp Monin Hazelnut sugar free syrup
  • 1 tbsp vanilla extract
  • 2 tbsp of Clarks carob fruit syrup


In a blender the tofu, choc shot, sugar free syrup, vanilla extract and carob syrup in a blender.  Melt the chocolate and pour into blender.  Blend for 30 seconds, then spoon out into dishes.  Sprinkle with crushed digestive, or icing sugar.

It’s quite a heavy pudding so this should serve 4 people as you don’t need that much. If you want it thinner, only use 1 tbsp of almond butter.  It’s also amazing if you leave it chilled overnight too (that’s if you can wait).

There’s quite a bit you can do with silken tofu and it’s not just for vegans and vegetarians as it’s multi-use across the board.

It’s low calorie and low fat so guilt-free, giving you the ability to put the creaminess into your cooking without the guilt! Just integrate it, use it and love it.

  1. Tofu is really good when you know how to use it. I struggled to start with to make tofu tasty on its own. I find, like you have used it here, it is good when combined into another dish
