As you may know, I’ve been trying to lose weight  for quite a while now. I lose a few pounds then give up as get bored of the same food constantly so I decided that I would try something different and buy myself a slow cooker to try lower fat foods and different foods for a change instead of the same old stuff.

My first meal in the slow cooker was Beef Goulash and wow, it tasted really good. The meat was tender, the sauce was tasty and the best thing is it’s just 288 calories per portion and that portion is a good sized one too as the recipe as you see below gives you 4 good hearty portions. As you can see by the picture served with Tagliatelle and a cheese and onion bread it is a good filling meal what fills you up for a while.

Goulash

I am hoping to try a few different meals in the slow cooker now so if anybody has any low fat recipes they would like to share then please do.

INGREDIENTS:

  • 900g Lean Stewing Beef cut into chunks
  • 1 Red bell Pepper sliced
  • 3 Garlic Cloves crushed
  • 250ml Beef Stock or Broth
  • 250ml Red Wine
  • 1 400g Tin Chopped Tomatoes
  • 1 tbsp. Tomato Puree/Paste
  • 1 tsp Paprika
  • 1 and a half tbsp Plain Flour
  • 1 Onion Chopped
  • low cal cooking oil
  • Salt & Pepper to taste

METHOD:

Season the Beef and quickly brown in a smoking hot pan with a little of the low cal spray, once browned remove from pan and dust with flour by putting in a bag with the flour and giving a good shake. Add all ingredients to the slow cooker and mix well, leave to cook on low with the lid shut for 5-6 hrs or until the Beef is tender and cooked through, If you do want the sauce a bit thicker then leave to cook for a further 45mins with the lid off.
